As the Nutrition Services - Dietary Aide at Colonial Pines Healthcare Center, you will assist the food service team in creating a positive and healthy dining experience for residents. The Nutrition Services Dietary Aide ensures that meals, snacks, and hospitality items are prepared, and the dining room is set up within the correct serving times. Additionally, you will collaborate with other department staff to ensure desired service and the clean-up of meals, snacks, and hospitality areas.

Job Duties and Responsibilities:

Safe Food Handling

  • Understands and follows guidelines for food handling and storage, including all raw and prepared foods.
  • Tests and records temperatures of hot and cold foods; records temperature of cold food storage areas. Addresses negative results to the Nutrition Services Manager.
  • Properly discards expired or contaminated food items.
  • Follows and enforces hand washing, wearing gloves, and use of hair restraints.
  • Complies with established infection control and universal precaution policies and procedures and uses required protective wear when performing daily tasks.

Food Preparation

  • Follows and enforces methods to control cross-contamination.
  • Prepares food using standardized recipes and in the required amounts specified by production worksheets and according to special diet requirements.
  • Uses available tools (spreadsheet, prep-at-a-glance, production guides) to ensure timely and accurate meal production and portion control, incorporating steps to properly pull, thaw, and prep foods in advance of production needs.
  • Ensures foods prepared are served within meal serving hours, preserving quality, temperature, and appearance.

General Food Service Duties

  • Serves meals in accordance with facility methods, using correct portion control and plating/presentation guidelines.
  • Performs daily and scheduled cleaning of the kitchen and equipment per established sanitation procedures.
  • Ensures the work area is properly cleaned and sanitized after each task.
  • Ensures the serving line and dining rooms are correctly set up and cleaned after use, including tasks such as rolling flatware, setting tables, maintaining tabletop condiments and centerpieces, and other duties as assigned.
  • Properly stores, chills, and reheats leftovers for later use.
  • Cleans and arranges food storage areas.
  • Assists other department staff as needed for timely production, service, and clean-up.
  • Completes kitchen close duties (PM shift) as assigned by Nutrition Services Manager or directed by the cook in charge.
  • Other duties as assigned.

Qualifications:

  • Food handler’s card required.
  • Previous experience preferred.
  • Must have a fundamental understanding of sanitation, cleanliness, and personal hygiene.
  • Must be able to communicate tactfully with co-workers, residents, family members, visitors, government agencies, and the general public.
  • Must have regular, predictable, and dependable attendance.
